CHOW MEIN RECIPE

 

 

Again pre cooked protein is usually used in this recipe meaning it’s directed towards leftovers or perhaps a rotisseried chicken from the market. If you can’t find fresh noodles, dry will …  ramen works …  in a pinch you can even use spaghetti.  You can also add a little curry powder to the recipe for an exotic touch to your repertoire. You can serve the chow mien sauced, a recipe follows, or plain.

1 Pound chow mien noodles      

4 Ounce sliced dried Chinese mushrooms, re-hydrated

8 Ounces julienne of beef, chicken, pork or fish

2 Tbs soy sauce

1 Tbs rice wine  

1 Tsp chili paste

1 Cup sliced & separated  yellow onion  

1 Cup sliced celery           

8 Ounces bean sprouts 

3 Ounces green onion sliced       

1   Tsp salt or granulated chicken base    

  • Boil the noodles until tender, then drain, oil and reserve liquid.
  • Use 8oz of the water to rehydrate the mushrooms
  • Combine the soy, wine, oyster and chili sauces & marinate the beef
  • Sauté noodles in wok till lightly brown, remove to service plate
  • Sauté ONIONS 1 minute then remaining vegetables, remove & reserve
  • Sauté ½ meat in wok then the other adding the already cooked portion
  • FOR UNSAUCED Add vegetable then sugar and salt or granulate beef base
  • FOR SAUCED Add the sauce slurry , cook till thickened then add vegetables
  • Top noodles with the meat and veg mix then serve

 

 SAUCE 

 

                                               

2 Tbs fresh ginger minced

1 Teaspoon Sugar & Soy Sauce 

As Needed Corn Starch Slurry    

6 Ounces Stock

2 Tablespoons EACH Rice Wine & Oyster Sauce  

  • Saute ginger till fragrant
  • Combine the next 5 ingredients into a slurry
  • Add this well mixed to the  wok cook till thickened, pour over noodles
